Why this recipe is good for you

This recipe is especially rich in Gut health, Calcium and Fibre.

  • Gut health — A healthy gut supports digestion, immunity and even mood. Fibre-rich and fermented foods — like yoghurt, oats and legumes — feed the good bacteria that live there.
  • Calcium — Calcium helps build and maintain strong bones and teeth and supports normal muscle and nerve function — important throughout life and particularly around menopause.
  • Fibre — Fibre supports healthy digestion, helps steady your blood sugar, and feeds the good bacteria in your gut.

A gut-friendly twist on a toastie — tangy sauerkraut and melted cheese on wholegrain bread.

Ingredients

  • 2 slices wholegrain bread
  • 1/3 cup sauerkraut, drained
  • 40g tasty cheese, grated
  • 1 tsp butter or oil

Method

  1. Butter the outside of both bread slices.
  2. Place the cheese between the unbuttered sides and grill in a pan over medium heat until golden, about 3 minutes each side.
  3. Remove from the heat, open the toastie and tuck in the sauerkraut before closing and serving warm.

Tip: Add the sauerkraut after grilling, off the heat, so the live cultures aren't cooked.
