This recipe is especially rich in Gut health, Protein and Fibre.

  • Gut health — A healthy gut supports digestion, immunity and even mood. Fibre-rich and fermented foods — like yoghurt, oats and legumes — feed the good bacteria that live there.
  • Protein — Protein helps build and repair muscle, supports your immune system, and helps meals keep you satisfied for longer.
  • Fibre — Fibre supports healthy digestion, helps steady your blood sugar, and feeds the good bacteria in your gut.

Lunch / Dinner · Serves 2 · Ready in 20 min · Rich in Gut health, Protein, Fibre

Ingredients

  • 200g tempeh, sliced
  • 2 cups broccoli florets
  • 2 tbsp soy sauce
  • 1 tbsp grated ginger
  • 2 cloves garlic, crushed
  • 1 tbsp sesame oil
  • Cooked rice, to serve

Method

  1. Steam or blanch the broccoli for 2-3 minutes until bright green. Set aside.
  2. Heat the sesame oil in a pan and pan-fry the tempeh slices until golden, about 3 minutes each side.
  3. Add the garlic and ginger and stir for 30 seconds until fragrant.
  4. Return the broccoli to the pan with the soy sauce and toss to coat.
  5. Serve over rice.

Tip: Steam the broccoli just until bright green — overcooking softens the fibre-rich crunch.
