Kangaroo & sweet potato

One of the richest iron meals going, lean and Australian.

Serves 2 · Ready in 25 min · Rich in Iron, Protein

Ingredients

  • 300g kangaroo steak (or lean beef)
  • 1 large sweet potato, cubed
  • 2 handfuls rocket
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and pepper

Method

  1. Roast the sweet potato with a little oil and the paprika at 200°C for 25 minutes.
  2. Season the kangaroo and sear 2 to 3 minutes each side (keep it rare to medium, it toughens if overcooked). Rest 5 minutes.
  3. Slice the kangaroo and serve over the sweet potato and rocket.

Tip: Kangaroo is very lean and exceptionally high in well-absorbed iron. Lean beef works well too.
