One of the richest iron meals going, lean and Australian.

Ingredients
- 300g kangaroo steak (or lean beef)
- 1 large sweet potato, cubed
- 2 handfuls rocket
- 1 tbsp olive oil
- 1 tsp smoked paprika
- Salt and pepper
Method
- Roast the sweet potato with a little oil and the paprika at 200°C for 25 minutes.
- Season the kangaroo and sear 2 to 3 minutes each side (keep it rare to medium, it toughens if overcooked). Rest 5 minutes.
- Slice the kangaroo and serve over the sweet potato and rocket.
Tip: Kangaroo is very lean and exceptionally high in well-absorbed iron. Lean beef works well too.
